Gourmet grilled cheese on marbled rye

I saw something like this in an advertisement, so I just had to try.  It is a grilled cheese sandwich made with:

• Sharp cheddar cheese
• Romano
• Smoked horseradish

What makes this sandwich unusual (in addition to the cheese blend) is that the crust you see is actually crisped cheese.  Romano and sharp cheddar were grated and a pile placed in the hot pan where it started to melt straight away - the cheese sandwich was placed on top of the melting cheese, and the whole thing allowed to cook until the cheese on the outside crisped. Another pile of grated Romano and cheddar was placed next to the sandwich, then the sandwich was flipped onto the pile of cheese, and the whole thing allowed to crisp.

The result was a great sandwich golden crisp cheese on the outside and melted goodness on the inside
