Smoked pulled pork and cheese sandwiches

I came across these pics of a sandwich we did last summer. I like smoking pork shoulder, and it makes a wonderful base for sandwiches. The ingredients are simple: hollowed out hoagie rolls, caramelized onion, white American cheese, and of course a heap of pulled pork all grilled on the flat iron.

The sandwich is both crispy and tender, smoky, cheesy, and slightly sweet from the onions - no condiments needed.
